Ice cream cakes are the sweetest!

Ugly oil spill cake

                                                                   Let's eat cake!

I'm the luckiest, and at the same time the most cursed, girl for having married a man with a insatiable sweet tooth! My husband will say, "Did you know tomorrow is President's Day? Can we have cake?" or, "Did you know that five years ago we ate lunch for the first time at Fat Joe's. You were wearing your favorite color, green. Can we have cake?" So, you get the point any day is cake day in his world.

His latest request, and even this one threw me, was for an oil spill cake. A what? The husband says, "You know, a cake with oil spilling out and over the side." Sure, I reply.  I'm sure I've seen that one before! NOT! He has OD on news and information floating around on this greasy topic and that's reason enough to eat cake! Anyway, I attempted to please him, even if it was only with a box of cake mix and canned icing. He liked it. He (with the help of two greedy kids and yours truly) ate it. It's all gone.

I cut the center from the top layer, put the two layers together and iced the entire cake with canned chocolate icing.




Next, I used the center piece round taken from the top layer of the cake (cut into cubes) and a batch of homemade chocolate icing to fill in the hole and that helped to create a spill of gooey goodness.

Got snow? Make snow cream!

We did get snow and it's beautiful. Such a rare occasion for SC to have snow. When the flakes started falling I put a metal mixing bowl out on the deck to catch clean snow. Well, our bowl was overflowing last night and we made the best batch of yummy ice cream made with snow. The kids may get a chance to make more snowcream today.

This is a great clip for Snowcream. I did not make mine outside. Too cold for me. Having cold bowls and untensils help slow the melting if not making this treat outdoors. An outdoor activity the whole family could enjoy.

Pound Cake - Sweet Treats!

It's a cold, wet day here in SC. Feeling the need for warmth hatched the idea to bake something. So, after a search through the pantry and an ingredient check I came up with these sweet treats!




Chocolate Drizzled Pound Cake and Blueberry Bread

I used two packages of store bought muffin mix. To one batch I added 1 cup blueberries. Baking this mix in small loaf pans makes a perfect little pound cake. Each package makes one loaf. The time and temp from the package was used in this baking process cooking until they passed the toothpick test. Chocolate icing was melted and drizzled over the first cake, forming Chocolate Drizzled Pound Cake. I then sliced the Blueberry Bread for individual snack cake treats. Yum!

Cooking: Blueberry Muffins


One bowl of frosted, frozen blueberries....
Growing up we had lots and lots of blueberries.
My Daddy is a gardener who grows luscious berry bushes.
I close my eyes and picture him tending, picking, and taste testing his goods.


One well used and stained cookbook.
This is one of my favorite cookbooks. This book has everything you would ever need to know ( including things I'll never use, but like to read about) when it comes to recipes. My Mama gave me this book along with others and I share her passion for cooking!

Muffins in a hot oven. Simple, easy and quick.


End results...golden, plump and full of berries.
Yum! OK, three of these look a little naked on top.

My daughter is the first to enjoy this batch of homemade treats!

Muffins are one of my favorite foods. They are small, tasty bites of rich goodness! Not only are they great for snacks, breakfast foods, and lunchbox treats they also make me smile!

Apple Jiffy Muffins




This is a recipe that I stirred up a few days ago. It turned out wonderfully. I like to experiment in the kitchen.



1 small apple
1 tbsp honey
t tsp cinnamon
2 tbsp butter
1 tbsp brown sugar
1 box Jiffy Corn Bread mix



This recipe is made with layers and all ingredients should be divided evenly among muffin cups.

Slice apples thinly and place into bottom of cupcake liners, apples will need to be cut to fit. Drizzle honey over apple slices, divided into each cup. Add butter, divided into each cup. Sprinkle with cinnamon again divide among each cup. Add brown sugar the same way. Finally, mix Jiffy Corn mix according to instructions and add to each cup on top of the apple layer. Muffin tin or paper should be filled to edge of paper and spread evenly. Bake in pre-heated over following baking temp and time on the mix box.

This recipe makes 5 muffins. Muffins can be stored in the refrigerator and reheated.
